Flash freezing fish (tuna, escolar and moonfish) with dry ice

So last week I finally made it out to the Tuna Harbor Dockside Market and picked up some Ahi, Albacore, Opah and Escolar fillets. I love sashimi and poke but I know it's not recommended to eat raw fish because there is a risk of food poisoning or contracting a parasite. Basically it has to be froze...

Re: Flash freezing fish (tuna and escolar)

- Slowly added some pieces of dry ice. It's best to make the pieces the size of a golf ball or so and add them slow so the liquid doesn't boil over the top Dry ice is very cold and will burn your skin almost instantly so handle with care! - IMG_2904.PNG - I used a laser thermometer to measure the te...

Re: Flash freezing fish (tuna and escolar)

Once the temperature dropped below 30-35F I added few more pieces of dry ice and started putting the fish in I kept monitoring the temperature so when it went above 30F I just added some more ice - IMG_2908.PNG - I left the fish sitting there for about 10-15 minutes - IMG_2909.PNG - Once they are f...

Re: Flash freezing fish (tuna and escolar)

When you're ready to eat your fish, just put the packets into a room temperature water for about an hour and it's ready to go!
The sashimi came out excellent, as fresh as it gets.

P.S. Don't try this at home 8-)

Thanks for the instructions. For those who try this, make sure you're in a well ventilated area, or you can pass out from the CO2.

Reefy weekend over negative tide

I am starting to understand why low tide, especially negative tide, is so prized. Unfortunately, crazy low tides during day time are pretty much behind us... Anyway, last weekend had negative tide in the afternoon. Waded in and casted with heavy gear to get over the edge. And... A couple smaller bas...

Backbreaking weekend...

Had an afternoon and an early morning session. North county reefs. Mostly used 13 ft rod and 40 lb mainline to cast over the reef edge. #2 and #1/0 circle hooks. The best fish is always the one that was lost. How true! This morning I felt some smaller fish biting, some were fairly strong. Then Bam! ...

Last but definitely not the least, a couple sheeps: PXL_20230421_232852646.jpg PXL_20230421_222954315.jpg Later this morning, my lower back was suddenly "locked up", when I was simply walking. I guess all the pulls this week put a toll to my back, and it is telling me to stop. Aye aye Sir ...

Lagoon Opaleye on the Artificial

Headed up to Carlsbad area to have a look around lagoons at low tide during the last grunion run. Not much luck on the halibut, a few mixed bag little critters on various fave plastics and the opaleye ate a MORF perch grub bounced on the bottom. Some aggressive little fish in the lagoon. 20230416_14...

FISHERIES INVENTORY AND UTILIZATION OF SAN DIEGO BAY, SAN DIEGO, CALIFORNIA FOR SURVEYS CONDUCTED IN APRIL AND JULY 2022

Vantuna Research Group published their 2022 survey a few months back. You can read the 82-page report here. More corvina

Got in some more corvina fishing recently. More quantity over quality compared to before but still some pretty fun fishing. All caught on rapala shadow rap or spook. I’ve really been liking the shadow raps lately. They seem to have better action than LCs even though they don’t cast as far (also chea...

San Jose Del Cabo 4/15

Just saw this forum, cool. Was down at Cabo Azul in San Jose over Spring Break. Took the kids this time. Fished two days. First day sucked for fishing but the kids were champs and we saw a grip of whales which was cool. Second day I went Out with just my father-in- law. I got 5 bonito, fun on the ji...

Re: Werfless

Pretty sure this is not a re-launch of the old site. Why the comparison? Only the format was cloned. These are different people, or else why launch a new site, when the old one could have been tidied up and rearranged a bit. I am an administrator on a couple of sites, and administrators can do grea...
